Rice Salad with Apricot Tamari Dressing

Ingredients

  • Salad:
    • 2 cups rice
    • 4 cups water (to cook rice)
    • 3 ribs diced celery
    • 1 bunch green onions sliced
    • 1 raw large diced red bell pepper
    • 2 cups of corn (fresh or frozen)
    • 1 cup peas (fresh or frozen)
    • 1 8 oz. can sliced waterchestnuts
  • Dressing:
    • 1/4 cup Bragg Aminos or Tamari Sauce
    • 3/4 cup rice vinegar
    • 1 cup crushed pineapple or pineapple juice
    • 1/4 cup no sugar apricot jam
    • 2 tsp. each of garlic powder, onion powder and dry mustard
    • 2 Tbsp grated ginger
    • 1 1/2 teasp five spice powder

Instructions

  1. Cook 2 cups short grain brown rice in water.
  2. Blend dressing ingredients in a blender
  3. When rice has finished cooking, combine and mix salad ingredients
  4. When completely mixed, add Apricot Tamari Dressing
