An oat-topped apple crisp sweetened with dates, apple juice, and raisins.

Ingredients
- For the topping:
- 3 oz pitted dates, chopped
- ¼ cup plus 1 tablespoon apple juice
- 1¾ cups old-fashioned rolled oats
- 1 teaspoon cinnamon
- For the fruit:
- 1¾ pounds Granny Smith apples (4–5 medium), peeled and cored
- ½ cup raisins
- For the fruit sauce:
- ½ cup old-fashioned rolled oats
- 1½ cups apple juice
- 3 tablespoons lemon juice
- 1 teaspoon cinnamon
Instructions
- Soak the chopped dates in the apple juice for at least 15 minutes. Stir the rolled oats and cinnamon together in a medium bowl.
- Slice the apples into thin wedges about ⅛ inch thick, cut them in half crosswise, and place them in a bowl with the raisins.
- Preheat the oven to 350°F and set aside an 8×8-inch baking pan.
- For the fruit sauce, grind the oats into flour in a blender. Add the apple juice, lemon juice, and cinnamon and blend until smooth.
- Stir the fruit sauce into the apples and raisins, then transfer to the baking pan.
- Blend the soaked dates and apple juice until smooth, then stir into the topping oats.
- Spread the topping over the apples and bake uncovered for 25–30 minutes. Cool for at least 5 minutes before serving.
Notes
- Granny Smith apples soften while retaining their shape, but other apples may be used.
- For variation, replace one apple with berries, peaches, nectarines, pears, or chopped pineapple.
