Ingredients
- ¾ cup brown rice
- 1¾ cups water
- 1 15 oz can black beans or other beans
- 1 medium onion
- 1 envelope taco seasoning mix
- 1 medium tomato
- ½ head lettuce
- 12 oz frozen corn
- ½ bell pepper
- 6 whole wheat tortillas or lavash
- Salsa
Instructions
- Cook the rice in the water. The legacy recipe suggests microwaving on high for 5 minutes, then at 50% power for 20 minutes.
- While the rice cooks, finely chop the onion, tomato, bell pepper, and lettuce. Cook the onion and bell pepper, and heat the corn according to its package directions.
- When the rice is done, add the beans, onion, and seasoning mix.
- Warm the tortillas shortly before serving.
- Serve the tomatoes, lettuce, corn, bell pepper, salsa, and rice mixture separately so each person can assemble a burrito.
