Ingredients

  • ¾ cup brown rice
  • 1¾ cups water
  • 1 15 oz can black beans or other beans
  • 1 medium onion
  • 1 envelope taco seasoning mix
  • 1 medium tomato
  • ½ head lettuce
  • 12 oz frozen corn
  • ½ bell pepper
  • 6 whole wheat tortillas or lavash
  • Salsa

Instructions

  1. Cook the rice in the water. The legacy recipe suggests microwaving on high for 5 minutes, then at 50% power for 20 minutes.
  2. While the rice cooks, finely chop the onion, tomato, bell pepper, and lettuce. Cook the onion and bell pepper, and heat the corn according to its package directions.
  3. When the rice is done, add the beans, onion, and seasoning mix.
  4. Warm the tortillas shortly before serving.
  5. Serve the tomatoes, lettuce, corn, bell pepper, salsa, and rice mixture separately so each person can assemble a burrito.
