Rice Salad with Apricot Tamari Dressing

A simple cold rice salad good as a side salad or as a trio of salads on a hot day.

Cook 2 Cups short grain brown rice in 4 Cups of water.

When rice has finished cooking add :

3 ribs diced celery

1 bunch green onions sliced

1 raw large diced red bell pepper

2 cups of corn (fresh or frozen)

1 cup peas (fresh or frozen)

1 8 oz. can sliced waterchestnuts

When completeled mixed add Apricot Tamari Dressing

Dressing :

1/4 cup Bragg Aminos or Tamari Sauce

3/4 rice vinegar

1 cup crushed pineapple or pineapple juice

1/4  no sugar apricot jam

2 tsp. each of garlic powder, onion powder and dry mustard

2 Tbsp grated ginger

1 1/2 teasp five spice powder

Mix ingredients well in blender
