Split Pea Soup

Customers of Little Green Forks seem to just love this soup. We are glad to be able to publish their recipe. While easy to prepare, this soup bursts with flavor way beyond what you may be used to with other pea soups. The chefs at Little Green Forks started with the baseline recipe below, and then to really give it punch they doubled the basil, thyme, pepper, and salt. Please note that this is not a low-sodium food. But oh so good!

Yield: about 5 cups

1 small onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1 potato, diced
4 cups water, divided
2 cloves garlic, minced
1/2 tsp basil
1/2 tsp thyme
1/2 tsp ground black pepper
1 tsp salt
1 cup dried split peas

1.    Heat 1/4 cup of water in a large saucepan. Cook and stir carrot, onion, celery, basil, thyme and pepper for about 5 minutes. Add the peas, potatoes, salt and the rest of the water. Simmer, stirring occasionally, for 45 to 50 minutes, or until thick.
