Whole Wheat Pasta Shells with Roasted Cauliflower Sauce

A tasty and healthy pasta dish. If you don't tell them its cauliflower, they'll never know.

1 lb. cauliflower cut into small pieces

2 heads of garlic

salt to taste

pepper to taste

1/4 cup vegetable stock

lemon juice to taste

1/4 tsp. paprika

1 package whole wheat pasta shells

Spray Pam

Cook Shells according to package instructions and set aside.

On Roasting Pan spread cauliflower cut into small pieces, add spices and spray Pam. Roast at 400 Degrees for 30 minutes or until browned.

Once the cauliflower is fully cooked you will be blending in a blender to create a sauce.  Add vegetable stock to thin and lemon juice to add tang.
