Choosing Life and Butternut Squash

 

I just passed the 5th anniversary of my cardiac arrest. Since that time I learned that heart disease is caused by what we eat. Now I choose to eat for a long and healthy life. I know many people choose instead to eat the foods that studies show leads to illness and early death. I do understand that there are many challenges associated with consistently eating the most healthy foods. But when I think about all the good things that have happened to me in the last five years, I know my choice is the right one for me.

I've enjoyed special times with each of my kids. We've had some great family vacations together. Whenever my wife or kids laugh or smile, it is precious to me. Sometimes, the little things are nice. For example, after a long day at work, as I drive home I may get to see a sunset that just fills the sky with color. At times like these I realize that I almost lost all these great moments because I was eating the wrong things. That realization gives me a renewed determination to overcome all the challenges associated with eating healthy, so I can continue to have these precious life moments.

As I was growing up in the midwest, I thought squash was this orange runny stuff that came frozen in a small box from the grocery store. It didn't have much flavor. I was pleasantly surprised when I first tasted this recipe. It is not runny, it is bursting with flavor, and it quickly became one of my favorites. I hope you will like it too.
